I recently visited a farmers market and purchased some purple dragons. I was very disappointed when slicing into it and not finding the entire carrot to be purple. The taste however quickly changed my thinking. They are delicious and as a recent convert to vegetarianism/vegan-esque lifestyle, I thought of all sorts of recipes I could make including a purple dragon carrot cake.

I love your site and will be back. If you are ever interested in doing a guest post, I would love for you to be my guest. I'm going to try the salad for lunch.

Just in time. I am on Weight Watchers and this will certainly be added to my recipe file. Only wish I could find that beautiful purple carrot in my grocery.

That Purple Dragon is gorgeous. Who knew a humble carrot could reach such beauty? The salad sounds great, especially because five servings a day should just be the start. Thanks!

This looks simple and refreshing. Definitely still fitting for summer and a great way to ease into fall. I'm pinning it right now! :)

Gah! There's no time in the oven (fixed). The original recipe includes instructions for roasting sunflower seeds, but since both roasted and raw seeds are readily available, I felt it unnecessary to include. Thanks for catching, Susan!
