A savory dressing that perfect's for all of your summer salads - but especially heirloom tomato salads - that has irresistible hints of BLT flavorings.
1heaping cup roughly chopped fresh tomatoes, shallowly cored (4 small, 2 medium, or 14 or cherry)
2tablespoonswhite balsamic vinegar
1tablespoonlemon juice
1tablespoonwater or vegetable broth(if you have extra lying around)
1tablespoonextra virgin olive oil(optional)
1teaspoonprepared mustard
1teaspoonchopped shallot
1/2teaspoonmaple syrup
1/2teaspoonsmoked paprika
1/2teaspoonkosher salt
Instructions
Add all ingredients to a blender, and blend until perfectly smooth. Use immediately and refrigerate any extra (makes about 1 cup - a serving is 2 tablespoons).
Notes
*What do a I mean by "shallowly cored"? Instead of digging deep into the tomato to core it, just remove a shallow v-shaped slice of the hard stem end. It's not necessary to do this for cherry tomatoes, by the way.
