Seasonal Soups to Cook in July

July’s hot weather landed with both cleated feet this year. While it’s arguably not perfect soup weather, it’s also not not perfect soup weather, as these Seasonal Soups to Cook in July will show. Chilled gazpachos are always refreshing and the easiest of all soups to make — usually just a little chopping and then blending and chilling. Shrimp is a light protein that brings the aroma of sea breezes and makes for a lovely soup ingredient. And finally, it couldn’t possibly be July without fresh-on-the-vine tomatoes. When the local harvest starts rolling in, I’ll be picking my share and more. Fresh tomatoes make the best tomato soup, fitting right into the season.

Chilled Soups

Cold soup is a dish that doesn’t always make the most sense … until July rolls around. Then butterflies flit and puppies frolic and an appetizer serving of something chilled and refreshing and savory is exactly the thing we need.

Shrimp season is wrapping up on the Gulf coast, but before it fades away, here are some of my favorite shrimp soups. I’m not an exuberant fan of seafood, but I do love shrimp for its mild, briny flavors.

Tomato Soup

Tomato soup is definitely a year-round selection here at Casa SoupAddict, but of course it can’t help but shine brightly in mid-summer, when the heirloom tomato plants start to get heavy with gorgeous globes of fruit. I squeezed in another chilled soup in this section, as my unique guacamole gazpacho is full of fresh tomato flavors.

I do love tortellini. Out of curiosity, I just did a quick search on my blog for recipes with tortellini and found a baker's dozen. And it's not just a May-December romance: this tomato soup recipe is 12 years old. My affection for the cheese-stuffed pasta is here to stay. Tomato soup and tortellini are a summer match made in heaven, I do believe.
