Sheet Pan Roasted Red Pepper & Tomato Soup – Fire engine red and bursting with tomato flavors, this soup recipe combines the convenience of sheet pan roasting and blender preparation for an almost hands-off soup. Almost because if you have a few minutes, make the paprika roux. You won’t be sorry

Creamy Tomato Tortellini Soup – Generally speaking as a soup fanatic, one of my favorite ingredients in soup is pasta and ever since refrigerated cheeses tortellini hit the market, it’s tortellini. They cook up quickly, they have substance and flavor, and go wonderfully in just about any soup. Including this creamy tomato version. It’s comfort in a bowl.

Guaczpacho (Guacamole Gazpacho) – The first of two entries in the “tomatoes meet avocado in soup and fall in love” category. The beautiful thing about gazpachos is that they’re almost always dump-and-blend situations — as is this one. Fresh tomatoes, guacamole ingredients, and a casual chill in the fridge equals one refreshing summer soup.

Roasted Tomato Guacamole Soup – Entry #2 is the winter counterpart. Roasted tomatoes, guacamole ingredients, plus bacon and other aromatics create one beautiful soup that’s perfect for when the first notes of autumn hit.

Salads & Sandwiches

Tomato Lovers Tomato Salad – So, yeah, this is the ultimate tomato lovers’ salad. I usually grow many varieties of cherry tomatoes, each packed with deep tomato flavors, because tomato salads are life in the summer. This salad celebrates the tomato full throttle, complete with a smoky tomato vinaigrette that’s just :chef’s kiss:.

Quinoa, Tomato & Pomegranate Salad – This is one of my go-to winter salads. Standard tomatoes are nothing to write home about in the winter, but cherry tomatoes aren’t half bad. And they definitely take care of mid-winter, snow’s-up-to-here tomato cravings. A light vinaigrette tops hearty quinoa, crisp cucumbers, and slightly puckery pomegranate seeds.

Heirloom Tomato Sandwich with Smoked Corn Mayo – This is the sandwich that all heirloom tomato lovers wait for. A heart boule is sliced in half and spread thickly with you’ll-want-to-eat-it-by-the-spoonful smoked corn mayo. Then layer on shingles of lightly salted heirloom tomato slices in every color of the rainbow. It makes tomato season worth waiting for!

Caprese Salsa Fresca Bruschetta – A caprese salad makes a right turn into salsa-land and ends up on toasty slices of vinaigrette-brushed multigrain bread. A delightful appetizer or light lunch!

Tarts & Galettes

Puff Pastry Tomato Tart – A riff on a traditional corn pie, this super easy puff pastry version features cherry tomatoes, rich and creamy burrata, plus a pesto spread in place of mayo. Unique and delicious!

Loaded Heirloom Tomato Galette with Cornmeal Crust – All of our favorite summer flavors are layered onto a hearty but less fussy cornmeal crust. A lovely twist on the tomato galette.

Grilled Tomato & Corn Galette – A classic tomato galette that’s built for the grill. Keep the house cool while creating this summer favorite tomato dish.

Tomato Corn Pie for Two – It’s not that we don’t love a good dose of leftover tomato corn pie. But these cute individual servings are hard to resist!

Green Tomato Pickles – I do love a good pickle, and no one was more surprised than I when green tomatoes moved to the top of that list. Use up your end-of-season green tomatoes by making a batch of refrigerator pickles (no canning!). The result is unique and deliciously pickley — perfect for charcuterie boards!

Caprese Bites – An easy and adorable summer appetizer that makes great use of super flavorful cherry tomatoes and creamy and mild mozzarella ciliegine.

Creamy Roasted Tomato & Red Pepper Dip – Perfect for late summer harvests, this rich and creamy dip takes full advantage of the smoky and savory flavors of roasted tomatoes and red bell peppers.

Fellow Tomato Lovers, I hope I’ve piqued your appetite with ideas to use up our favorite summer fruit!
